About Copper Star Cellars

The Copper Star Cellars story begins with what started as a simple question in the back of Jeff Mund's mind. "What if we could make our own wine." He quickly answered his own question, developed a plan and a few months later a 10-acre parcel of land was cleared and high fenced on the Mund's "Double Diamond Ranch" outside of Seguin, Texas. This was to be the beginning of a long process with one main goal…to create a fabulous wine using native grapes that satisfy native tastes. The first run at the Vineyard began in March of 2007 with the planting of Shiraz grapes, ("Shiraz" deriving from the word "Syrah"). Syrah grapes are prominent in the country of France as well as in the rest of Europe, Argentina, Chile and most of the United States. The Shiraz grapes are typically found in the countries of South Africa, Canada and New Zealand. After a long summer of rain and humidity, the vineyard became overrun by Red Bandedleaf Rollers, a parasite which killed off the Shiraz plants. In the Spring of 2008, new plants were planted, but this time a Texas native grape was the grape of choice, Black Spanish Grapes, also known as Vitis labrusca. This plant prospers in the soil and climate of the Copper Star Vineyard and makes a delicious wine. ​​Copper Star Cellars began bottling wine in May of 2009, with the annual harvest multiplying each year.
